I use a trio of Asian flavours in my shepherd’s pie, which you might not think is a natural fit in a quintessentially British dish, but it works. Their characteristics can elevate even the most traditional British dish into an umami-fest. The miso, soy and fish sauce round out flavours without overpowering. Shepherd’s pie calls for minced lamb, but this can be swapped with beef. If you’re using beef, look out for a mince with 20 per cent fat. Remember – fat is flavour! I don’t like making mashed potato, so I use shop-bought. I know many people don’t share my disdain for mashing, in which case make your own! ....

This cacio e pepe is a classic recipe from my restaurants, a beautifully simple dish that we first served when we opened my Bermondsey branch of Cafe Murano. Serve alongside a salad if you like, but I prefer it as is, for a comforting supper or weekend lunch.

It may cause the odd raised eyebrow to see that today’s recipe is for baked potatoes, but once you’ve got through this long Easter weekend of rich roast, sticky cakes and loads of chocolate, I think you will thank me for a simple midweek meal.
On the other hand, I have always thought that the baked potato is an underestimated plate of food which was due a serious look. Recent developments in the food world have proved this true. In my eyes, serving fish whole is the best (and easiest) way to cook: presenting it to your friends or family has a celebratory feel about it.
