Home food preservation season is beginning, with gardens starting to bloom.
Planning is an important step in the preservation process. To ensure safety, home canning supplies and equipment need to be inventoried and checked before preparing to preserve any food.
To understand a little bit more about why preparing for home food preservation season is so important, especially when it comes to canning low acid foods, I interviewed Martha Zepp to help understand the importance of proper pressure canning and testing pressure canner dial gauges.
Zepp is the home food preservation consultant at Penn State Extension in Lancaster County. She holds a bachelorâs degree in home economics education and a masterâs degree in family economics from Penn State University.
This past year, it distributed supplies to 2,000 students across three counties Okaloosa, Walton and Bay.
Stacy Reed, regional outreach director, said Backpack 2 School is an initiative in which the church helps children in need get started with school supplies, such as a backpack, new shoes and other items. The drive serves schools in Walton County, Panama City Beach schools and select areas in Okaloosa County.
“It s wonderful to see families that have come back now year after year, and now into the next generation,” Reed said. “It s great to be a part of their lives, and they look forward to seeing us as much as we look forward to seeing them. And, of course, we have a number of new families every year because somebody may need assistance where they didn t need it last summer, depending on their life circumstances.”

The Penn State Extension is urging people to become more active and eat healthier this spring.
The organizationâs Everybody Walk Across Pennsylvania program led by instructors Stacy Reed and Laurie Weinreb-Welsh aims to help participants develop and maintain better exercise and eating habits.
The virtual, eight-week program will run from April 5 through May 24. While individuals are welcome to participate on their own, the program is primarily geared toward groups of up to five. Each team member is encouraged to walk 10 miles per week, but there is no minimum requirement.
Participants may also substitute various physical activities for walking by using the organizationâs exercise conversion chart.
