It s Roots Salad Kitchen at the Flats at Big Tex. Leonard Lem Dixon and Michael Hicks, the owners of the spot that opened last week, are first-time restaurant owners, but they don t seem to need any training wheels.
I stopped by the restaurant a day ahead of their grand opening. The team was working like a well-oiled machine, clientele has clearly already been established, and the menu had me sending photos of my food to my health-conscious big brother.
