WILMINGTON — It’s been less than a week since Café Chinois — the latest eatery from the Indochine restaurant group — opened its doors to the public. Yet, its expansion is already on the horizon, according to owner Solange “Niki” Thompson and her daughter Marie Bartsch, who oversee the restaurants, along with director of operations Kathy Long.
“It’s in a strip mall, so you’re limited where you can go,” Bartsch said, speaking of Chinois’ location in the former Southern Thai space (3715 Patriot Way) in Fulton Station. “So, Mom’s taking over the driving school next door soon.” ....

New Indochine Wilmington restaurant location opens soon


They are now adding furniture and updating the look of the restaurant. 
“We didn’t really have to renovate,” Thompson said. “We are just putting in a little T.L.C.”
The end result will be upscale, but still comfortable. And have a full bar. 
“It will be some French, but also Asian,” she said. “Kind of funky and bohemian.” 
The new owners are keeping on the staff of Southern Thai and many of their popular menu items will remain, including the fried chicken and Sriracha fried rice.
Thompson said they will bring in some other Asian dishes as well, like pho, roasted duck, Vietnamese crepes, Korean bulgogi and japchae, with stir-fried sweet potato noodles. ....

Indochine owner will launch new French-Asian eatery, Café Chinois, by end of month

WILMINGTON â€“ In December, when Solange “Niki” Thompson and her daughter Marie Bartsch opened Indochine Express — the satellite location to its big sister Indochine — they also were formulating plans for a third restaurant. Now, the ladies and their Indochine restaurant group will be opening Café Chinois, a French-Asian establishment, by the end of March.
The café will be located in the former Southern Thai space, at the corner of South College Road and the North 17th Street Ext. in a strip mall near the New Hanover County Public Library at Pine Valley. According to Kathy Long, director of operations for the restaurant group, the menu will focus on Thai, Vietnamese, Chinese, Korean and French-inspired cuisine. ....

Making Wilmington a home
Thompson moved to the U.S. from Vietnam when she was 22 years old. She joined her husband in Wilmington, who served as the last commander of the Ft. Fisher Air Force Station before it closed in 1988.
“Everything was La Choy soy sauce, La Choy water chestnut, La Choy bamboo shoot and rice from Uncle Ben,” she said of the Asian food scene at the time. While at the grocery store, she would always try to convince her husband to stock up on rice, before finally adjusting to the idea that the U.S. didn’t have a rice shortage. ....
