PITTSFIELD — How many cups of bad coffee can a man take? For a local chef and worker in the restaurant industry for 25 years, too many to count.
The big thing was to create coffee that people would enjoy and that would impact the food industry, George Shoemaker, founder and co-partner of Currency Coffee Co., said in a phone interview Tuesday. I would go out to eat and hated the coffee. The restaurants don t focus on it. It s the last thing you have, you shouldn t be left with a bitter taste.
Shoemaker said his coffee philosophy is to select the best individual beans. I find the best ingredients and use them, he said. ....

Pandemic tossed fledgling Berkshire Innovation Center 'right into the water.' There was a positive 'flip side.'


PITTSFIELD — Like most businesses, the Berkshire Innovation Center had to pivot quickly in 2020.
About two weeks after the $13.8 million facility’s grand opening ceremony took place at the end of February last year, the COVID-19 pandemic caused the state’s economy to shut down.
“We were thrown right into the water,” said BIC Executive Director Ben Sosne.
The center’s first year didn’t go the way anybody thought it would. But, Sosne believes that, still, the first 12 months have been fruitful for the two-story 23,000-square-foot facility at the William Stanley Business Park of the Berkshires.
“We hoped to have bustling events and live things here at the BIC,” Sosne said. “But, on the flip side, there was no better way for us to learn what we’re doing, if our goal is to help companies rapidly innovate and rapidly prototype and learn new technologies and adjust and be nimble.” ....
