This spring, Vaca’s Creamery will become Chicago’s first fully vegan ice cream shop when it opens in the city’s East Wicker Park neighborhood. Founded by Mariana Marinho and Dylan Sutcliff, Vaca’s Creamery will offer oat-based soft serve ice cream in chocolate and vanilla flavors alongside globally inspired seasonal offerings including passionfruit, guava, and tiramisu. Known for their commitment to ethical ingredients, Marinho and Sutcliff are currently developing a menu of additional ice cream flavors and toppings free of palm oil and unethically sourced chocolate. “We’re working hard to make a menu that we can really be proud of,” Marinho told VegNews.
Washington, D.C. Gets its First Vegan Doughnut Shop
Don’t walk, run, to Washington, D.C.’s first all-vegan doughnut shop, Donut Run. The pop-up turned storefront has prompted socially distanced lines around the block each morning since its inception.
Founded in 2016 as a pop-up and inspired by Southern California’s The Donuttery, the shop’s husband and wife team, Shawn Petersen and Nicole Dao, have finally launched their brick-and-mortar, Donut Run. Located in the heart of the Tacoma neighborhood of Washington, D.C., the bright pink painted exterior makes it easy to spot while driving through town. The shop offers a variety of creative doughnut flavor options ranging from matcha, French toast, and cereal-coated, but doesn’t skimp on the classics. The menu also includes Boston cream, chocolate sprinkle, powdered jelly varieties, and coffee’s favorite doughnut a classic cake.
Restaurant Shutter
Austin Japanese noodle shop Ramen 512 is shuttering its takeout-only restaurant in ghost kitchen hub Kitchen United Mix in the Wooten neighborhood. Its last day of service will be on Sunday, January 17. Owner and chef Vinh Thai always intended that the takeout venture was a temporary one. Now, he’s going to turn his attention to opening a physical restaurant, as he had planned on doing before the novel coronavirus pandemic. Last November, North Austin Korean restaurant Seoulju also closed down its takeout/delivery branch within Kitchen United.
Brewery Opening
Pinthouse Pizza’s fourth location 2201 East Ben White Boulevard in the McKinney neighborhood is opening this week, as reported by Craft Beer Austin. Dubbed Pinthouse Brewing, the space features the brewery as well as a restaurant. The menu specifically not include pizza; rather, there are sandwiches, salads, and snacks.
