Chef serves up plant-based meals and classes
SULLIVAN Alicia Randolph-Lucchesi can make you think it is extra fudge not black beans in her batch of brownies. The Sullivan chef and educator specializes in plant-based cooking.
But even more than that, through wellness classes, live cooking demonstrations and her meal delivery service, Randolph-Lucchesi provides her students and customers with a holistic, inclusive and affordable understanding of what it means to be healthy, all while never sacrificing taste.
Earlier this winter, Randolph-Lucchesi made a cornbread chili casserole. She cooked her own beans to avoid excess salt and chemicals found in canned beans.
Skiing the Sunrise Trail
MOUNT DESERT Craig Roebuck likes to go on winter adventures. A few adventures that he had planned over the last year were canceled or postponed because of COVID-19, so he recently completed one closer to home.
In February, during a particularly precipitation-free stretch of six days, Roebuck cross–country skied the length of the Sunrise Trail from Ellsworth to Ayers. According to the Down East Sunrise Trail website, the trail is 87 miles and is the longest off-road trail on the East Coast Greenway (a 3,000-mile route stretching from Calais to Key West).
For the trip, Roebuck hauled his camping gear and provisions behind him in a retrofitted sled.
