Vegan Junk Food Café is definitely one of the more unique businesses to plant their roots in the Hudson Valley. According to their website, Vegan Junk Food is all about the mushrooms. Peaceful Provisions is a women-owned, vegan pastry shop that has been specializing in small-batch, scratch-made doughnuts since 2015. This spring, Peaceful Provisions will open a storefront in the Hudson Valley. While doughnuts will be the star of the menu, the shop will also offer a variety of baked goods such as cinnamon buns, muffins, scones, and stuffed cookies, as well as a small savory menu of soups, salads, sandwiches, and more!
