An argument could be made that MOD Pizza the Seattle-based company committed to sourcing fresh ingredients, animal welfare and fair labor practices is short for modern leaning.
But, actually, the name of Springfield’s newest za chain comes from how it constructs its pies each made on demand.
MOD Pizza has opened at 2401 Wabash Ave., sharing the address on the southern edge of the White Oaks Mall campus with fellow newcomer MISSION BBQ.
The fast casual pizza chain offers 10 classic combinations for those not comfortable in the driver’s seat.
Familiar staples like a basic cheese or sausage and pepperoni combo can be found here. But the classic menu also wanders further afield with the Lucy Sunshine (that pairs artichoke and mozzarella on a garlic-rubbed crust topped with dollops of red sauce) and the Tristan (that combines asiago cheese, roasted red bell peppers and mushrooms with a pesto sauce.)
Parkway Pointe Shopping Center won’t be a one-dog town, so to speak, much longer.
Lucky Dog s a new gourmet hot dog venue has filed paperwork with the city to open at 2975 Lindbergh Blvd. just west of the newly opened Portillo s.
Owner Gene Rowell said the Springfield site is one of several in the works throughout Illinois.
Lucky Dog’s flagship store opened last month in Westville in Vermilion County. Additional locations are planned for River Grove and Mattoon.
“I like to refer to it as the Subway of gourmet hot dogs,” said Rowell, who operates under the corporation name, Kickn 66 Liquor & More.

Tim and Emily Lewis opened two new eateries in full COVID-19 dine-in ban mode. So they figured a month was ample time to relocate their established bakery, especially since such restrictions have all but been erased.
But the Springfield couple behind Three Twigs Bakery & Bistro are finding government regulations aren’t the only hurdles to opening a business a year into the pandemic.
The public will get its first taste of the bakery’s new home at 3429 Freedom Drive April 24 two weeks later than the Lewise originally planned to begin dine-in services.
And Emily is calling even that milestone more of a “celebration” than an actual opening.

Dining service and in-person sales at the new 3429 Freedom Drive address were expected to begin Saturday. However, owner/operator Emily Lewis said the public opening has been pushed back until late this month because of struggles finding additional staff.
The scratch-made bakery will continue to fill catering and advanced orders from the Parkway Pointe address, which it has done since March 22. Orders must be placed online at www.threetwigsbakery.com.
Pre-orders for whole cakes, as well as dozen and half-dozen bulk orders of cupcakes, doughnuts and cookies in regular or gluten-free/vegan varieties can be picked up from 9 a.m. to 2 p.m. Wednesday through Friday and from 9 a.m. to noon Saturday and Sunday. Pre-orders must be placed at least 48 hours prior to the scheduled pickup.
