Three Twigs Bakery has found a new home on Springfield’s west side but its departure won’t be leaving a vacancy on Toronto Road.
Owner Emily Lewis confirmed a contract has been signed to move the business to 3429 Freedom Drive, the former Pie’s the Limit site in Parkway Pointe. The bakery’s last day at 1370 Toronto Road is March 14.
However, fans still will be able to purchase the bakery’s scratch-made pastries from the address.
Brandon and Cana Austin are taking over the Toronto Road location, which will be home to Grateful Coffee Co. An early April opening is expected. The first-time business owners say the initial menu will serve a wide variety of hot and iced coffee drinks, sandwiches made with Three Twigs breads and Three Twigs pastries.

A teenager from Jacksonville was victim of a shooting in Springfield’s Parkway Pointe shopping plaza, the second shooting in Springfield’s west end in less than two weeks.
Springfield Police confirmed a 17 year old female from Jacksonville was shot in front of the Wal-Mart Supercenter at 3401 Freedom Drive shortly before 6PM Thursday. Springfield Police Deputy Chief Joshua Steunkel told the State Journal Register that the victim’s injuries were not life-threatening. It wasn’t immediately clear how many times she had been shot. The store was briefly placed on lockdown as police searched for the perpetrators of the incident.

While you wait in a quick moving drive-thru line this weekend to get Portillo’s at Parkway Pointe, could you soon have another high-end fast food option? The State Journal-Register is reporting that the old Baker’s Square Building on Freedom Drive has been sold to the Tartan Realty Group-A Chicago based retail brokerage firm–for a little over a million dollars. Baker’s Square abruptly closed last January, and maybe the fact that I personally didn’t noticed they had closed until the pandemic started in March probably speaks volumes as to why Baker’s Square closed in the first place.
