Lauded chef Alejandro Paredes is casting a wider net for his Fish Lonja concept.
The companion spot to Carnitas Lonja, the popular spot on Roosevelt, opened in 2019 with fresh fish and shrimp ceviches and fish tacos. The food is fresh and light, a nice counterpart to the unctuous carnitas Paredes has received plenty of accolades for, with nods in Eater and Esquire in 2018.
The food and Paredes caught the attention of Chad Carey of the Empty Stomach Group behind Barbaro, Extra Fine, Rumble, Pizza Party, Little Death and Hot Joy. The result? Mutual respect for all things Empty Stomach and Carnitas, in which will now result in a partnership between Paredes and the Empty Stomach Group.
