Dairy-free cheeses featuring novel fermented microbial protein to launch by year end, says Superbrewed Food Dairy-free cheeses featuring a novel bacterial protein could hit the market by the end of the year, adding an intriguing new dimension to the burgeoning dairy-alternative space, says microbial fermentation specialist Superbrewed Food (formerly known as White Dog Labs).
Grown in fermentation tanks at record speed using a fraction of the inputs required to grow traditional food crops, or raise, feed and slaughter animals, Superbrewed Food’s fermented microbial protein (brand name TBD) will initially hit the market in branded retail products such as mozzarella, block cheddar, and cream cheese, said co-founder Dr Bryan Tracy.

Most premium lentils grown in Australia are exported, but lentils that are cracked, chipped or discoloured often end up as cattle feed.
Pinnaroo-based farmers Phillipa and Skeet Lawson in South Australia s Mallee region are trying to change that and have started to turn their weather-damaged lentils into a gluten-free flour.
With products that have a 95 percent smaller environmental impact than conventional meat, it’s safe to say that Redefine Meat is living up to its namesake with its proprietary 3D-printed meat products. So much so, in fact, that it’s redefining meat even for an audience of primarily omnivore consumers.
From a “carnivore-branded” food truck in Kidron, Israel, earlier this month, Redefine Meat, in partnership with upscale Israeli meat distributor, Best Meister, doled out Alt-Meats products with minimal or no condiment, to let the meat speak for itself and see how it stacked up to animal-based versions, as a company press release shared of their little experiment.
Bel Group backs plant-based innovation with Paris accelerator on the cards The dairy major is partnering with Big Idea Ventures (BIV) to accelerate projects in alternative proteins. BIV currently runs accelerator programmes in New York and Singapore but has revealed plans to launch a Paris edition later this year.
Demand for alternative proteins is on the rise. In the plant-based space, the Good Food Institute (GFI) estimates that US consumers are spending 28% more on plant-based foods compared to 2017 figures.
Between 2017 and 2019, the plant-based cheese market grew by nearly 51%, and, according to a recent announcement by Big Idea Ventures (BIV), it is not just vegan players that see potential in the space.
