While the meat is front and center of any barbecue combo plate, the accompanying side dishes can't be overlooked. Collard greens, mac and cheese, baked beans, hushpuppies — they're all good, but which ones are the best?
We asked a panel of acclaimed pitmasters and barbecue experts across the Carolinas and Georgia for their favorites:
Rodney Scott — Rodney Scott's BBQ (Charleston, SC, Birmingham, AL, Atlanta, GA)
"I would say baked beans. I would follow that with mac and cheese. And if the barbecue is super spicy, then I'll add coleslaw. We put barbecue sauce in [the baked beans], of course, We also put in some pork. Every now and again you get a little hearty bite of pork in there. I think that's why I like baked beans so much."
