Dave, What I’m going to say is probably considered heresy by many, but it is what I whole heartedly believe at this time. Maybe I’ll learn better in the future. But the following is my experience after baking hundreds of SFSD breads.
Carl’s Oregon Trail starter ceased to be a few weeks after you got it home and started feeding it with your flour in your environment. The same will occur with any starter to keep and maintain.
Sour flavored sourdough dough is not nearly as dependent on the starter as many bakers believe.
This is where the real heresy begins. I believe the sour flavor is mostly produced during the actual fermentation of the dough. Starters do have some affect for sure. A NMNF that is aged and composed of 100% rye is a great example, but even a properly fermented and aged NMNF starter needs time during dough fermentation to multiply the bacteria.

While filling my grocery cart I found a new-to-me flour called “Wheat Montana” with that logo prominently displayed. Having used the store or major brands for years I wasn’t prepared for the awesome difference. The dough has a delicate feel, a softness in texture that was new to me. I even wrote a fan letter to the company, thinking it might be a small, niche business.
I have learned it is a family-owned wheat farm that consists of 15,000 acres. Dean Folkvord and his wife Hope have worked over 30 years to achieve their success. They raise the wheat then it goes into the system. The wheat is cleaned and turned into various products, flour in bulk for commercial use or in smaller packages for grocery stores. Today, we’re looking at a tractor with a bit of an identity crisis (for multiple reasons). It’s the Minneapolis Moline G1355. The G1355 was the second-to-last model to leave the line wearing the iconic Prairie Gold paint. White Motor Company had bought out Minneapolis-Moline back in 1963, and the G1355 and G955 were the end of the line. The G1355 was built at the Oliver factory in Charles City, Iowa. This would be the first Moline tractor built there and also the most powerful two-wheel-drive farm tractor that Moline ever built! It was a beast of a tractor, too, making nearly 143 hp. on the PTO dyno. It coupled Moline’s motors (either the Model 504 running on propane, or the Model 585 on diesel) with Oliver’s rear end components.
