LEXINGTON, Ky. (April 28, 2021) As teenagers approach adulthood, life can come at them fast. Whether it’s making the leap from high school to college or getting that first job and moving out of their parents’ home, young people face a lot of new situations in a short time span. The University of Kentucky is offering a web-based course this summer to help students hone important life skills to make that transition easier. Adulting 101 is an eight-week summer course beginning on June 15 and meeting every Tuesday through Zoom. Organized by the UK College of Agriculture, Food and Environment and the UK Cooperative Extension Service, the course is open to teenagers nationwide, no matter their goals. Adulting 101 originated as a county-based family and consumer sciences extension program piloted in Central Kentucky. ....

Cooking and eating together can help families grow closer, but it can be challenging for parents to put a meal on the table when time is limited and money is tight. “Cook Together, Eat Together” by University of Kentucky Family and Consumer Sciences Extension is designed to help families enjoy more home-cooked, healthy meals. Featuring easy recipes for breakfast dishes, soups, vegetables, salads and one-pot meals, the book lays out a strategy to enable families to spend more quality time together while also preparing foods that are affordable and delicious. ....
LAS CRUCES, N.M. – New Mexico State University’s Cooperative Extension Service will present a series of online cooking classes designed to teach adults with diabetes how to cook healthy meals. The Kitchen Creations series consists of four weekly classes, during which participants will learn food safety, how to plan meals, how to read food labels and how to manage carbohydrates. The first class kicked off Feb. 4. Beatriz Favela, a Family and Consumer Sciences Extension agent at the Doña Ana County Extension Office, and Janae Kraus, a registered dietitian nutritionist, will teach the classes through Zoom.
