Salem County is making news over a tempest in a teapot that is, unfortunately, being treated like a scandal by journalists. Stacy Pennington is the Salem County Deputy Administrator. She also performs the service of board of commissioners clerk and director of human resources as well as equal employment opportunity officer. Instead of being grateful for all Pennington is doing some are seeing fit to attack her over the most benign, silliest Cinco de Mayo joke.
She sent an email to all employees with a harmless joke in the form of a meme that said Happy Cinco de Mayo and it showed a sink with a jar of mayonnaise sitting in it.

A union representing Salem County workers is demanding an apology and diversity training after they say a county official circulated a culturally insensitive meme to employees.
On May 5, Salem County Deputy Administrator Stacy Pennington sent a message via her county email account to all employees that contained a meme with the words “Happy Cinco De Mayo” and a photo of a jar of mayonnaise in a sink, according to a grievance filed by Joe Hiles, executive vice president of Communication Workers of America Local 1085.

Chris Woo with Owyhee Produce in Nyssa, OR, and Parma, ID, said on May 5 his company had recently finished out its 2020-21 shipping season from the Treasure Valley. “We just got done with shipping in Idaho/Oregon cold storage onion crop for the year and have moved our customer base to new crop from California,” he said. “Quality is good, and we’re shopping all colors through the month of May.” And in recognition of the day’s festive significance, he said, “After work I’m going to have a margarita and maybe attend a piñata party. Happy Cinco de Mayo.”

Today is a day celebrated throughout Mexico (and now, around the world) as a way to commemorate the Mexican Army’s victory over the French Empire at the Battle of Puebla, on May 5, 1862.
It’s a date where people take a moment to celebrate Mexican culture and food which naturally, means that many folks are looking for solid guacamole recipes today. Now, while The Smithsonian states that traditionally, the dishes enjoyed on Cinco de Mayo include Mole Poblano (recipe here) and Chalupas (recipe here), a solid guac never goes awry.
