Whole Foods Market will open its new 64,737-square-foot San Francisco flagship store on Thursday, March 10. In 2021, pending FDA approval, California Caviar Company will bring to market North America’s first domestic caviar made without slaughtering the sturgeon that produced it. The method comprises massaging mature eggs from mature sturgeons’ bellies, then stabilizing the eggs in a calcium bath so they retain their pearl-like texture while releasing the fish back into the water. The process was invented by marine biologist Angela Köhler to make farming sturgeon more economically appealing, thereby undermining poaching of wild sturgeon, many species of which are officially listed as endangered. “If the caviar will be available [at] a ....
