Those who skipped to the final stage of acceptance may have the best chance of moving forward despite COVID-19 upending their business plans. That’s what the Madison-born Mergen did. A New York-trained chef and restaurateur, Mergen achieved his lifelong dream of opening an upscale bar and bistro in June 2019 when he opened 107 State on State Street. Nine months later, the pandemic changed everything. ....

The owner of Pasture and Plenty is no stranger to the ups and downs of the food business, but similar to other local purveyors there was no way she could have prepared for the losses caused by the pandemic. After watching restaurants shut down in Seattle and New York City last February, McKenzie says it became clear by the first week of March that continuing business as usual was not a possibility. As a result, Pasture and Plenty closed the week before Gov. Evers’ Stay at Home order. ....
Photo by Sunny Frantz Pasture and Plenty Owner Christy McKenzie designed a commercial kitchen to feel like “a space of action and activity.” It’s almost surprising to learn Pasture and Plenty’s kitchen is a commercial build, because it has all the comfort and style of a dream home kitchen. “I call it the ‘kitchen of requirement’ because it can be the island that serves a beautiful feast, it can become a pop-up bar, it can be a cooking classroom, it can be a chef’s table. It can be a lot of different things,” says Pasture and Plenty Owner Christy McKenzie. The kitchen mimics the chameleon quality of the University Avenue shop, which offers meal kits, deli and bakery items, pantry goods, breakfast and lunch service, special dinners and catering. ....
