One of the biggest trends in dining during the pandemic came in the form of ghost kitchens, those virtual restaurants that offer delivery-only dishes and meals. Diners can’t walk in and order and none offer a dining room. Robert Earl of Planet Hollywood fame went big with ghost kitchens, turning to celebrities such as singer Mariah Carey, rapper Tyga, and Mayor of Flavortown Guy Fieri to add cookies, chicken bites, and sandwiches, all created inside restaurants he owns such as Brio and Boca di Beppo.
Now a local restaurant plans to reveal its own 8,000 square-foot virtual restaurant with four different cuisines this summer at The Plug that plans to include a market at the back of Blume Kitchen & Cocktails in Henderson.

Chef Lanny Chin has only been in Las Vegas for about six years, but he’s already become a mainstay in the local culinary scene, on and off the Strip. Since relocating from Cleveland, he has served as executive chef of PKWY Tavern and Clique Hospitality’s Apex Social Club, and opened Greene St. Kitchen at the Palms as chef de cuisine. In this instance, the project isn’t an after-hours chefs’ competition like Back of House Brawl, or a pop-up specialty menu on secretburger.com two breakout projects from the culinary entrepreneur. No, Mannina’s latest project, Vegas Test Kitchen, fills an everyday void for both Las Vegas diners and chefs. It’s a Downtown food hall made for Vegas locals by Vegas locals.
The concept: Seven chefs share a building, each with their own space, each trying out concepts that may one day develop into their own brick-and-mortar restaurants. Or, they might flame out after their initial three-month run at Vegas Test Kitchen.

Mariposa Cocina & Cocktails, the Mexican restaurant that opened in late November in the former Shiraz space, opted to temporarily close on January 30.
“As some of you may know, tomorrow will be our last dinner service at Mariposa for a month or so,” chef Robert Lomeli tells friends on Facebook on January 29. “We will be pausing service until restrictions are lifted to a more sustainable level. So if you’ve been wanting to come check out what we’ve worked so hard to put together and try some of the food that has been in my heart for so long, now is the time! But don’t worry, one thing I promise is that I’ll be back stronger than ever. If you know me, you know it’s no bullshit. I’ll be seeing you all soon!!”
