Six Eateries With International Cuisine to Operate Out of Former East Nashville Car Wash

Local commercial real estate investor and developer Tyler Cauble announced Wednesday six future tenants for The Wash — a food and beverage business to operate in the bays of a former East Nashville car wash building. 
Located at 1101 McKennie Ave. and fronting Gallatin Avenue, The Wash is conceived to provide alternative options to chefs and restaurant owners who may not want to (or be able to) invest heavily in a permanent, conventional space. As such, Cauble says the operators can choose to incubate their food and beverage businesses via short-term leases. Peruvian Chef Virgilio Martinez Will Open New Fine Dining Restaurant Maz in Tokyo


“The farmers don’t know the word ‘organic’ but (their farms and practices) truly are,” Martinez exclaims, adding that this is the beauty of the Andean people, which is why he would like to support them by buying ingredients from them.
“I’m also responsible to the farmers,” he continues. He shares how he works with more than 100 farmers but cannot use all that they harvest, despite having three restaurants Central, Mil Centro and Kjolle (helmed by his wife, Pia) in Peru.
