Lasagna for Shavuot


16 lasagna noodles
1. Preheat oven to 415 degrees F. Grease a rectangular  baking dish.
2. Heat vegetable oil in a frying pan. Add onion and cook 5 minutes. Add carrots, peppers and garlic and cook for 5 minutes. Stir in marinara sauce and water.
3. In a bowl, whisk together ricotta, egg, cream cheese, mustard, salt and pepper.
4. Spread ⅔ cup marinara sauce in baking dish, Top with 8 noodles, overlapping them a little. Cover with half the ricotta. Arrange the rest of the noodles on top and cover with remaining marinara sauce and ricotta. Top with Parmigiano-Reggiano and cover with foil.
5. Bake in the oven for 20 minutes. Remove foil and continue baking for 15 minutes. Remove from heat and let sit 10 minutes before serving.  ....

The bustle of the Machaneh Yehudah market is clearly audible even though it’s only the beginning of the week. It resounds through the stone alleyways around Agrippas Street, echoing through the windows and doors of the century-old homes, until it reaches one narrow street that’s barely wide enough for a car and pedestrian to pass at once. This is the seam line between the quaint Nachlaot neighborhood and pathways that feed into the market. But even during the busiest shopping hours, this spot remains quiet  as if a soundproof barrier exists around the building of Yeshivat Hamekubalim Nahar Shalom. ....

Eggnog: Not Just For New Year's Eve


½ t. nutmeg
1. Place egg yolks in a heat-proof bowl over a saucepan of simmering water. Add ¼ cup plus 2 T. sugar and whisk over low heat until yellow and thick, about 5 minutes.
2. Whisk in milk, bourbon, rum and brandy. Set aside.
3. Whisk egg whites in another bowl, until soft peaks form, adding ¼ cup plus 2 T. sugar. Add to yolks.
4. Beat heavy cream until lightly thickened and add to egg mixture along with whipped cream and nutmeg.
Chill thoroughly or refrigerate overnight. Whisk before serving.

4 cups milk or half and half
