Prof. Eran Segal of the Weizmann Institute of Science said on Channel 13 news  that Israel and the world will have to learn to live under the shadow of COVID-19 for a long time. The continuing mutation of the virus, coupled with the inability to vaccinate children currently, makes a full return to normal life anytime soon unlikely.
“Before the more infectious U.K. and South African strains emerged, medical officials had estimated that around 60-70% of the population must attain immunity either by recovering from the disease or by getting vaccinated for herd immunity to be achieved, Segal said. ....

Ribs, and They're Kosher

Ribs, and They’re Kosher
By Sybil Kaplan | January 14, 2021
In Missouri, where I grew up initially in a kosher home, then in a kosher-style home, I never ate ribs.
Barbecued ribs are an early 20th century innovation created by the rise of industrial meatpacking, mechanical refrigeration and commercial barbecue stands. Barbecue originated not as a way of “making do” with lesser cuts, but rather as a method of whole-animal cookery one usually staged for a large crowd. Whole carcasses of pigs, goats, lambs and even cows were cooked over a bed of coals in pits dug in the ground. When people in the 19th century ate barbecued ribs, they pulled the meat from a whole animal that was already cooked. During the mid- to late-1800s, waves of Germans and Czechs, including many Jews, immigrated to the United States, many of whom made their way to the new state of Texas. They started exchanging ideas for how to smoke brisket. Since brisket was sti ....

Stews Are Ideal for Winter

Stews Are Ideal for Winter
By Sybil Kaplan | January 07, 2021
The wind is blowing hard, the rain comes and goes, no snow yet, but the temperature is definitely cold. It’s not Canada or the U.S. Midwest, but Jerusalem.
Many of us live in buildings with central heating, only no one taught the Israelis to keep it on low all day; instead they turn it off at night and start it up again next evening for five hours.
In my apartment, I can regulate the heat myself and keep it on low as long as I like, taking the chill off the rooms. Warming the insides with a good stew at dinner helps. ....

The Shuk, the Soldiers, and the Spies

To put it simply, was the shuk still with Bibi?

As I headed into Machaneh Yehudah on a recent Thursday afternoon, it was  to quote Yogi Berra  déjà vu, all over again.
Shortly before Israel went into its third lockdown, the brightly lit alleyways thronged with Shabbos shoppers; spices, fruit, and halvah beckoned from carefully arranged stalls; and the merchants praised their merchandise with their usual ear-splitting gusto.
Apart from some shuttered stores and ubiquitous face masks, not much had changed from my last foray into the shuk to test the political waters. As in January 2019, Bibi was still in power, the left wing was churning out new parties, and Machaneh Yehudah was festooned with portraits of Menachem Begin. ....
