Pink Flamingo Diner 
With its shining exterior and brightly upholstered booths, the Pink Flamingo Diner, 19726 U.S. 441 in High Springs, looks straight out of 1950. But the updated menu options at Alachua County’s newest retro diner nods to the past while keeping up with popular contemporary dietary choices like vegetarianism. 
The Pink Flamingo Diner, now open for lunch and dinner, is in what used to be Floyd’s Diner, said Tara McDermott, vice president of food and beverage for Hilife Projects, which was involved with opening the restaurant. The Pink Flamingo is under new ownership and the space has been updated.  ....
