Long before the popular product hit the grocery store shelves, the collection of maple sap to make maple syrup began much before Europeans settled in America. On Fridays, Saturdays, and Sundays in March, visitors to Old Sturbridge Village will see the Village’s costumed historians demonstrating the maple sugaring process of the early 19th-century. They will be hard at work in the OSV sugar camp showing how maple sugaring has changed over the years, and how the sap is collected and boiled. “People associate maple sugaring with New England and its abundance of sugar maples. Many farms today in the region have long traditions of making syrup,” said Dave Hruska, coordinator of agriculture at OSV. ....
