Chef Aisha Ibrahim moved from Thailand to take over the Canlis kitchen.
After sifting through scores of candidates, Canlis has hired its new executive chef, the first woman but only the seventh person to head up the kitchen in the restaurant’s 70-year history. Chef Aisha Ibrahim reported for her first day of work Friday, after a journey that included an international move, multiple zooms, a faux journalism assignment, and one intentionally embarrassing TikTok-style dance video.
Ibrahim arrives as Canlis debuts its short-term canteen concept, meaning she’ll technically oversee the alfresco yurt menu and the contents of a newly installed smoker as she works with third-generation owners Mark and Brian Canlis to determine what this landmark restaurant will actually look like when it returns (hopefully in July) after 16 months of empty ....

Seattle s historic fine dining establishment Canlis just got a groundbreaking new leader in the kitchen.
Aisha Ibrahim will take the helm as executive chef at the storied Seattle restaurant as reported by the New York Times on Monday. Ibrahim will be the seventh chef in the restaurant s 70-year history, and the first female chef to hold the title as well.
Born in the Philippines, Ibrahim grew up in West Virginia and attended Le Cordon Bleu College of Culinary Arts in San Francisco. She went on to serve as sous chef at California s Manres, a prestigious three-Michelin-star restaurant, and followed that experience with international stints in Spain and Thailand. She had planned to open her own fine dining venture in Bangkok, plans that did not materialize following the outbreak the the novel coronavirus. ....

Since closing its dining room in March 2020, Canlis has reinvented itself several times over, shape-shifting from Seattle’s loftiest fine-dining restaurant into a bagel shop, a crab shack and a drive-in movie theater.
Now, the restaurant has made another, more permanent change, hiring Aisha Ibrahim as its new executive chef. Ms. Ibrahim, 35, is the seventh chef, and the first woman, to helm the Canlis kitchen in its 70-year history. She started work on April 30. ....

The sun is shining, the cherry blossoms are on the verge, and restaurants all over town are reopening after monthslong winter closures. Meanwhile, Canlis is offering another harbinger of better days to come—a final pivot that leapfrogs from spring straight into summer camp.
“We’re not quite ready to reopen,” says Mark Canlis. Even this week’s big news about 50 percent occupancy doesn’t pencil for a fine dining establishment. This morning the third-generation restaurant released details about how they plan to spend the months before the restaurant reopens—most likely in “early summer.” ....
