EDWARDSVILLE Continuing the trend of made-to-order, healthy meals, Just Right Eating (JRE) plans to open its second Illinois location next month.
The company, based in Springfield, plans to open in the Ironworks Plaza on Jan. 4, next to Global Brew.
Stephanie Johnson, an Edwardsville native, opened this concept in January of 2011 (after several years of putting together the logistics) in a 400-square-foot facility located in Taylorville. Johnson is a lifetime pursuer of health and wellness.

EDWARDSVILLE Just Right Eating, a healthy meal delivery service based out of Springfield, Illinois, is opening a retail location in Edwardsville in the Ironworks Plaza.
Just Right Eating will offer six different meal plans and grab n’ go in the Edwardsville location. People can sign up online or in the store. At the time of sign up they can choose if they want to have food delivered or available for pick up at the store.
Each meal plan offers the option to receive the default menu or go online and create your own menu with more than 70 items each week from which to choose, some with customizations. Products include snacks, entrees, breakfast and desserts. All items are healthy, balanced, portioned, fresh and nutritionally dense.
