Alexis Thomson has won $3000 through the NZME promotion Shop Local Christmas Cracker. All she had to do was spend $20 or more at a participating business, fill out a form and go into the draw. I was at Liquorland, buying something for my fruit cake, she says.
After all, that mixed fruit has to soak in something tasty to give the cake flavour.
Alexis says she is going to check out a local charity and find someone who really needs some Christmas groceries or something and help them out.

1 pomegranate, peeled and seeded
4 clementine, peeled and segmented
1 banana shallot, finely chopped
1 red chilli, finely chopped
Handful of fresh coriander, roughly chopped
Method
Start off with your lobster. Add all of the ingredients to a large pot of cold salted water and bring to a hard boil. Let the aromatics infuse for 5 minutes making sure to top up the water level drops too low. Have a large bowl of iced water large enough to submerge the lobster set aside.
Ensure your water is boiling and submerge your lobster headfirst into the pot and cover with the lid. A 500g lobster will require 8 to 10 minutes of cooking.

“The hampers are all really personalised.
“We’ve been in discussion with families to see what sort of things the children enjoy. We want these to be special gifts, not generic ones.
“The emergency hampers are about supporting people in need. It’s the season of goodwill and no-one should be struggling unnecessarily. We want to be there for these people.
“We’re having quite a lot of referrals coming in now and we’re just blessed to have the amount of support from our community that we do.”
