DALLAS The restaurant industry is feeling the impact of the nationwide labor shortage.
In June, the U.S. Department of Labor released data showing the number of job openings reached a high of 9.3 million at the end of April.

Donny Sirisavath the chef and owner of lauded Lao restaurant Khao Noodle Shop in Dallas, Texas has been interested in food for as long as he can remember. In fact, it was this curiosity and obsession with trying new things that landed him in the hospital to get his stomach pumped after mistaking a box of rat poison for Nerds candy (in his defense, he was around five and the rat poison made the same clanky sound as a box of Nerds).
“A lot of my childhood was just trying to survive with refugee parents and eat what was available to us,” he explains, chuckling. “I was a curious kid and got into things that I didn t need to get to.”

George Itoh, the co-owner of beloved Deep Ellum ramen shop Ichigoh Ramen Lounge, has died.
Itoh moved to Dallas in 2016, and a couple years later, he and business partner Andy Tam opened Ichigoh in the Deep Ellum space that formerly housed another ramen shop, called Tanoshii, in 2019. Following its debut, the restaurant earned rave reviews from both diners and critics alike for its flavorful bowls of ramen packed with springy noodles and excellent garnishes.
