As restaurants face a hiring shortage, owners are making changes to bring potential employees in the door. Kurt Huffman owns Chef's Table and manages restaurants across Portland. He raised hourly wages just in the last three weeks. With tip sharing, back-of-house staff members are now making about $22 an hour. Still, Huffman said it's not enough for a sizeable hiring boost. After the surprise 2019 closure of Commonwealth, a fine-dining restaurant hidden behind frosted glass in San Francisco’s Mission District, chef Ian Muntzert was wary of opening another restaurant, at least in a building he didn’t own.
But a move to Portland and a suddenly vacant space later, Muntzert is jumping in where he thought he never would again. In June, the former Commonwealth chef de cuisine will open Brasa Haya, a new Spanish restaurant in the former Beech Street Parlor space that will focus on high-quality meat and seafood, simply seasoned and grilled over live fire.
