Vegan restaurant Nuno’s is on a mission to serve tasty vegan tacos while revolutionizing the health of the local Dallas, TX community through plant-based fare.
. What was that journey like and how has that experience shaped your restaurant now?
Nuno: My father was trained in baking by my maternal uncles and started El Palote as a home bakery selling vegan and non-vegan goods. That was his hook a way of bringing people in and gradually introducing customers to tasty vegan treats. Eventually, the vegan offerings were doing so well that we decided to switch to a 100 percent vegan establishment.
Several years later, I decided I wanted to pursue my own creativity, so my wife and I decided to branch off to start Nuno’s. I actually took some time off and drove for Uber for a while to scout the city for the ideal restaurant location. It was important to my wife and I that we center the Hispanic community in our choice of neighborhood and decided on North Dallas. Not only did we want to represent a small Mexican restaurant business, but also be a beacon of change and information to the vegan and Hispanic communities.
