Like most bakers, Jon Olek starts his day long before sunrise. He fires up his oven at 3:30 a.m. and bakes for three hours before setting out to deliver fresh scones, Danishes, and brioche buns to city cafes and shops. “I get back right in time to go upstairs and help my daughter get ready for school,” he says, adding that he starts prepping for the next day’s baking when she leaves. Olek has that flexibility in his schedule because he doesn’t work at a commercial bakery, but rather out of a commercial-grade kitchen he built in his basement, where he does business as Black Cat Baking Co.

The currently closed Thistle and Mirth pub is reopening as a spacious ramen restaurant and bar by taking over the abutting space that formerly housed Berkshire Print Shop on West Street Beginning in spring, it will be ladling up the noodle soup, similarly themed menu items, and drinks Tuesday through Saturday for dinner service, takeout, and eventually lunch. Co-owner Austin Oliver said it is important to him to maintain the glory of the pub in the renovation while adding the element of ramen and abiding by COVID-19 regulations. The bar has been boarded up since the statewide lockdown in March, sparking questions and concerns from regulars who consider it home.

Fine: Technically you can’t eat a coffee, but as college kids love to boast diets consisting of coffee, coffee, and maybe the occasional Pit burger (Mel sauce a la mode), we felt this would qualify in the eyes of our lovely readers. Coffee is as essential to the college student as their laptops.
