Give in to pandemic cravings, starting with a homemade cheesesteak sandwich

In March, as covid-19 converged upon us and stay-at-home orders set in, I d wake up in flop sweats of panic from flashbacks to 1997, when a deadly virus, viral cardiomyopathy, attacked my heart, putting me on a ventilator for half of a six-week hospital stay and sending me home partially paralyzed. If you combine my heart issues with other coronavirus high-risk factors, among them age (61), autoimmune deficiency and borderline diabetes, they add up to no good reason this story should be about making great cheesesteaks at home with ingredients assiduously acquired in a pandemic, but here we are.
