The green star, which highlights restaurants that are leaders in sustainability practices, has been awarded to UK restaurants for the first time this year having made it debut in the French version of the red book in 2020.
#Restaurants have been chosen under various criteria, including championing local produce, being pioneers in the fight against food waste or being leaders in vegetable growing, according to Michelin, and have been selected on the basis of research, fieldwork and investigation carried out by the inspectors, it says.

The restaurants hold themselves accountable for both their ethical and environmental standards, and work with sustainable producers and suppliers to avoid waste and reduce or even remove plastic and other non-recyclable materials from their supply chain.
