/ Francois Morin opened Le Fournil in downtown Billings at the end of 2017. He began with baking baguettes and have expanded his offerings over the years.
Francois Morin has brought new foot and food traffic to downtown Billings. Opening up Le Fournil in December of 2017 fulfilled one of Morin’s life dream projects. The realization of his vision has brought artisan baguettes, breads and croissants and sometimes special orders of cheese to Montana’s Trailhead. In Singapore, where he lived before moving to Montana, he learned the art of bread baking.
From William Woo at Bakerz@Work Academy, Morin spent a month learning the subtleties of kneading, proofing, shaping and baking the perfect loaf. From the class, Morin secured the sourdough starter he continues to use at Le Fournil.

Tyler Samson purchased Bistro Enzo from James Honaker and reopened in May 2020. The restaurant has been refreshed with paintings by Kira Fercho and the addition of new bar seating and a chef’s counter.
Enzo translates from Italian as owner of an estate, and was originally named after the eldest son of then co-owners Laurent and Patricia Zirotti. The restaurant later owned the restaurant scene in Billings for over 20 years.
Former owner James Honaker, who founded the restaurant with the Zirottis, became the sole proprietor of Bistro Enzo after the couple left in 2008 to open their own restaurant, Fleur de Sel in Post Falls, Idaho. Ten months ago, Tyler Samson purchased the restaurant from Honaker, who wanted to retire.

Casey Anderson, owner of the Produce Depot stands in his small retail space where before the COVID Pandemic customers came in to buy fruits, vegetables and herbs by the bag initially and then later by the bag. Currently customers pick up CSA bags filled with 50% fruit and 50% vegetables.
Casey Anderson of the Produce Depot is bringing a fresh new take on local. In the old downtown Billings Alliance space across the street from the Babcock Theater, Anderson set up a small retail outlet in November of 2019. This expanded his solely wholesale business to restaurants. Here in this space, customers came in and bought fresh fruits, vegetables and herbs on Wednesdays and Saturdays beginning at noon. At first, Anderson charged fixed prices for different sized bags, later charging customers by the pound. Eager clients lined up outside before he opened, swarming in and quickly buying up his products.

Owner and founder Bonny Perkins opened The Sourdough Bagel during the COVID-19 pandemic. Her laughter and planning have been the best medicine in running her business during these times.
Planning and laughter gave rise to The Sourdough Bagel during the COVID-19 pandemic. On May 15, 2020, owner and baker Bonny Perkins expanded her business into a storefront in downtown Billings to sell her handcrafted sourdough bagels. On that day, Governor Steve Bullock had just allowed food businesses in Montana to reopen to 50% capacity due to the COVID-19 pandemic.
