Taco lovers throughout the United States have cast aside popular fillings like al pastor and carnitas in favor of a tender stewed meat infused with spices and chiles called birria.
Images of a hand dipping these shredded beef tacos into rust-colored liquid dominate social media. Local restaurants that have noticed and responded to this meaty trend by adding birria to their menu have been able to increase their food sales during a challenging time.

Clark County recorded 87 new COVID-19 cases and one new death Thursday as health officials stress the opportunity for appointment-free vaccinations at Vancouver’s Tower Mall site.
The death was a man age 80 or older with underlying conditions, according to Clark County Public Health. His death puts the county’s total at 258 deaths from COVID-19. Six deaths have been recorded since Friday, up from three the previous week and four the week ending April 16.

The mass vaccination site at Tower Mall in central Vancouver is offering no-appointment vaccinations for a second day, according to Clark County Public Health.
Anyone age 16 or older can arrive at the site, 5403 E. Mill Plain Blvd., between 8:30 a.m. and 4 p.m. today to get a first COVID-19 shot, the agency said in a tweet. The site is offering the Pfizer vaccine. No insurance or ID is required, and the vaccinations are free.

Clark County’s mass vaccination site at Tower Mall in Vancouver is offering walk-up and drive-thru COVID-19 vaccinations today, with no appointment necessary.
Anyone age 16 or older can show up and receive a vaccine dose for free.
The site has not been able to fill all of its open slots through online booking, so it is offering walk-up and drive-thru vaccinations until 4 p.m. today. The site has the Pfizer vaccine.
