Soak up Ethiopian flavours with injera

Please support them  .  There are good and not-so-good injeras; just-cooked injera, thinner and with a sourdough flavour, another quite malty and dark brown. Injera at parties and markets can look like rolled up face cloths and don’t taste dissimilar. Things don’t change too much from time to time at this particular Ethiopian centre in downtown Jozi. Joburgers refer to the general area and sometimes even this building as Little Addis. However, the entrance to the vestibule keeps looking bafflingly different. Today there seem to be loose-woven curtains where I remember silver trays, coffee goods and feather dusters.

Khanyisa has also written one of my favourite South African food books, Legacy of Living and Sparkles of Taste, from which I’ve learned to execute some exciting African fine dining recipes, including a favourite braised goat’s neck dish with pumpkin dombolo. It’s the reason I’m always trying to find goat meat. But this is about the book by her son, Muako.  We are hoping he can spend some time online with us, on screen or at least on the phone, with the not-quite-teens in Jozi this afternoon.

Please support them  .  The test is a slice of slightly charred, cooling toast, sourdough if you have it, the best homemade bitter marmalade slathered on, over a generous spreading of butter. The taste of the butter stands out intensely.  If it is very good butter it will seem rich and ever so slightly sour, be utterly delicious. You’ll help yourself to another slice just the same as the last and your memories or imagination will drift over soft, herby meadows of long-lashed, gentle cows, time slowed to the almost standstill of the sun.
