A Beloved Vegan Sushi Pop-Up is Opening a Food Cart, Has Plans to Open a Brick-and-Mortar

Updated April 27 at 9:07 PM The past year has seen a number of breakout vegan restaurants, from Mama Dut to Dirty Lettuce and Mirisata. Now, you can add Mitate to the list. After a series of successful popups, the plant based sushi purveyor has announced plans to open a food cart. Mitate will launch its first permanent spot at the CORE cart pod on Southeast 82nd Avenue in June. Known for its elaborate rolls topped with sake-poached pears and black truffle sauce, Mitate held its first pop last October. It quickly gained a following, selling out regularly at its first host, Ruse Brewing, and then at Mestizo.

What do you see here? A mayo-drizzled spicy tuna roll? Look closer. Fish is nowhere to be found. Couple Nino Ortiz and Summer Ortiz are veterans in the sushi world. Between them, their CVs include the stalwart Bamboo Sushi and Yoshi s Sushi cart in Multnomah Village. They launched their pop-up Mitate last November, later joined by another chef, Thai Nguyen. The sushi s textures and flavor profiles remarkably mimic seafood. One translation of the Japanese word mitate is “to see things from a new perspective.” So why not put fruit and vegetables front and center in vegan sushi made with gluten-free ingredients, with all the freshness, seasonality, and sustainability of its raw fish counterpart?
