/CNW/ - This fall, Dairy Farmers of Canada (DFC) is teaming up once again with The Great Canadian Baking Show for the series fifth season, which premieres on.
Preparation
Puff Pastry
Pulse flour and salt together in the bowl of a food processor. Add butter and pulse until mixture resembles coarse crumbs with some larger pieces.Â
Add water and pulse until mixture begins to come together. Turn dough out onto the work surface and knead gently to bring together. Form into a ½-inch-thick square and wrap in plastic wrap. Refrigerate for 20 minutes.Â
Turn dough onto a floured surface and roll into a 6x12-inch rectangle. Fold the top third down towards the bottom, then fold the bottom third up to cover. Quarter-turn the dough; roll out and fold as before. Rewrap and chill for 20 minutes. Repeat rolling and turns. Chill 10 minutes.
2 tbsp (12 g) cornstarch
Chocolate Cookies:
⅔ cup (64 g) cocoa powder
⅓ cup (32 g) cornstarch
¾ tsp (3 g) salt
¾ cups (168 g) butter, cool (not room temperature)
1 cup (200 g) sugar
2 tbsp (30 ml) vegetable oil
2 tsp (10 ml) vanilla
1 large egg, cold

Mulled Wine Jam
Combine wine, sugar, orange, salt and spices into a medium saucepan over medium heat. Bring to a simmer and cook for 5 minutes, strain and return to saucepan.
Stir together 2 tbsp water and cornstarch in a small bowl and add into the wine mixture. Simmer until mixture has a thick, jam-like texture, about 10 minutes. Transfer to a small bowl, cover and chill until ready to use.

While many Canadian drag performers have been seeking to compete on
Canada’s Drag Race, one such dragster is werking a rather different route.
Among the competitors on the latest season of The Great Canadian Baking Show is Vancouver’s own 25-year-old Sheldon Lynn.
Although he works as a software developer, one of his creative interests is baking. In particular, he enjoys integrating the flavours of his ancestral province of Szechuan with Western recipes.
Another one of his creative pursuits is performing as his drag persona Pangolin, who is a member of Vancouver’s all-Asian drag dynasty House of Rice.
