I was a judge at the Willoughby Rib Burn Off this weekend. That required tasting ribs from 13 different barbeque joints. Each differed from the others. All had tomato-based Kansas City style sauce. Other than that, they had varying degrees of sugar, salt, smoke and char.. Some were rubbed with seasonings and sauced. Others were simply sauced or glazed.
