Applicants for the two open seats on the Eagle Town Council each touched on a variety of issues in the small but growing town in their interviews. Those issues included supporting small businesses and recruiting new businesses, improving internet services, attracting younger people and families to town, helping older residents age in place, providing more affordable housing, protecting the environment, and enhancing outdoor recreation opportunities and quality of life. EAGLE Eagle Town Council members spent Tuesday evening interviewing applicants to fill two vacant seats following the deaths of Andy Jessen and Adam Palmer in an avalanche near Silverton in early February.

Eat This Week: The Assembly faces COVID-19 challenges as a new restaurant

Special to the Daily The night Caleb and Jaimie Mackey signed a contract to purchase the unit that would turn into The Assembly Food + Wine, Jaimie went into labor with their daughter. The day they took over the space, they had yet to find a chef to plan the cuisine. And at their grand opening on August 9, 2020, Eagle County restaurants operated at 50%, or 34 guests in The Assembly’s case. But when a passion is supposed to manifest, it does despite an apparent lack of chef, a first-born child coming into the world or a global pandemic. Food, wine and cooking has been a cornerstone of the Mackey’s relationship: they have bookshelves loaded with cookbooks, and they plan their trips based upon what they’ll eat. And, last August, their dream of owning a restaurant not only came to fruition, but also was embraced by the community.

The Vail Valley has a stable of staple restaurants Pepi’s at Hotel Gasthof Gramshammer on Bridge Street, for instance, which opened in 1964; or the Coyote Cafe at Beaver Creek, serving ski patrol and others for over 30 years; or Gashouse in Edwards, a rustic restaurant in an old 1900s gas station building. However, whether you’re a local, a regular weekend visitor or planning your return to the valley this winter or this summer or next year there’s usually a new place or two to try throughout the year. The Know Denver Post’s arts and entertainment section recently featured two new restaurants to the valley on its list of “Five new restaurants to try in the mountains this winter.”

Vail Valley restaurants adapt, innovate winter dining options for pandemic safety

Special to the Daily Vail Valley restauranteurs have always adjusted to the drastic seasonal changes of a resort community, but never before 2020 have they had to fire up such creative substitutions on the fly. Matthew McConnell, general manager of Splendido at the Chateau in Beaver Creek, shared how it’s been quite the rollercoaster of highs and lows. Splendido shut their doors to guests in March with the rest of the community, while still offering takeout meals and donating 150 to 200 meals a week to The Community Market. McConnell said the summer months were busy, but now with reduced capacity in the restaurant (only 25% at the time of this interview in early December) and an unknown winter ahead, McConnell and Splendido chef-owner Brian Ackerman didn’t waver on making yet another pivot and doing what Splendido does best creating memorable experiences for guests.
