This holiday season, Spike Mendelsohn of Bravo’s
Top Chef fame prepared a special vegan feast, which is available to order for pick up from locations of his vegan chain PLNT Burger. The feast features three courses: a Winter Green Salad (made with root vegetables, pumpkin seeds, and Follow Your Heart Goat Cheese and dressed in a sherry vinaigrette); an entrée course of Truffled Mushroom Wellington with Red Wine Jus (which comes with sides of citrus-glazed carrots, maple-glazed Brussels sprouts, and apples with candied walnuts; and potato and kohlrabi gratin); and a chocolate peppermint mousse for dessert. The holiday menu is available as a single plate ($29.99), a four-serving meal ($110), or an eight-serving meal ($200).

And when it comes to sustainability, there is a clear opportunity for food companies to step up, argues Goldman, who stepped down as executive chairman of Beyond Meat earlier this year (he still chairs the board) in order to focus on MD-based
