DOVER – When Dover restaurant owner Kaley Rae Fellows heard her vegan café was eligible for a grant from the U.S. Small Business Administration s $28.6 billion Restaurant Revitalization Fund, she recalls feeling like she saw the light at the end of the tunnel for the first time since the pandemic hit.
When she applied, the SBA estimated her business Roots Vegan Café & Juice Bar would receive more than $10,000. For two months, she waited anxiously for her application status to change from pending. Fellows had plans to maintain and expand her services and offerings with that money as a way to better position her business for the future. Those plans included adding more staff and offering dinner, as well as a beer and wine selection with house-made cocktails.

CONCORD, NH The last 15 months have been a boomerang, of sorts, for restaurants in New Hampshire.
Midway through March 2020, as everything shut down, many restaurateurs and business owners thought they were going to lose everything. The industry requires customers to go out to eat and drink, spend their money, and be social something that was restricted during the coronavirus pandemic. Eateries pivoted offering outside dining and takeout options and strategizing to stay alive. Many survived until infections died down but some, however, did not.
