kitch kitchen. reporter: we re in the west village at fatty crab to try a new twist on a summer staple. it s watermelon with pork. we re in the very cozy kitchen of fatty crab with chef anna grezel who s going to show us how to make pork and watermelon. reporter: two things i wouldn t normally think would go together. the great thing about it is the sweetness from the plain watermelon and the pickle, the tartness from the actual watermelon rind, helps cut through the fat a little bit. we re going to take all the rind off. so you re left with your clean piece of watermelon rind. reporter: this is cool. never thought to eat this part of the watermelon. it s almost like a really fresh cucumber almost. reporter: yeah, that s what it is. next we have to make the pickling liquid for the watermelon rind. we are going to start with dry thai chiles. i m going to toast them for a quick second. next ginger, lime zest. that goes straight in.
