The best easy cocktail recipes for outdoor parties
With large al-fresco gatherings back on the cards, polish off that pitcher and knock up some batch drinks this summer

From Monday, groups of up to 30 can meet outdoors as lockdown eases a further notch, and that means (weather allowing, of course) that al-fresco drinks parties are back on – a cause for celebration.
Time, then, to revive the “batch” cocktail or summer punch, something you can scale up to refresh a crowd. I’m sharing eight recipes, all relatively easy to make and which don’t require buying lots of expensive and obscure ingredients (nor do they call for syrups or cordials to be made in advance). They major on truly summery flavours, be that elderflower, mint, vibrant fruit juices or sparkling wines, and each has a refreshing, mouth-watering style of its own.

A classic Spanish drink. Switch the wine or fruit to make it your own

Prep time: 10 minutes, plus 1 hour maceratingÂ
SERVES
1 x bottle of young, fruity red wine (ideally an unoaked Spanish tempranillo)
30ml brandy or dark rum
Ice cubes
METHOD
Put the peach and orange pieces in a large glass jug or pitcher. Pour all the wine over and add the brandy or rum. Stir, cover and leave for an hour or two in the fridge for the fruit to infuse.
When you are about the serve the drink, add ice cubes, the orange juice and finally the lemonade.
