【明報專訊】每一個廚師在修煉廚藝的路上，都有自己獨特的步伐和目標，有的十分「專一」，只專注在單一菜系上，不斷鑽研，將傳統經典菜餚復刻改良，追求極致；有的未必可說是「花心」，但總之就喜歡探索不同風土文化，把各國的餐飲精髓集大成，演繹成自家的特色菜。來自德國柏林的Mario Paecke，便屬於後者。曾在德國一家米芝蓮餐廳任職多年，之後來港先後出任香港置地文華東方酒店Amber副主廚及SOMM主廚的他，現主理中環一家全新摩登餐館Margo，以高級歐陸菜形式，展現家鄉美食元素：「我的目的是要讓大家知道，德國菜不是只得豬手和香腸。」
