Upcycled Food Trend Gains Popularity

Apr 19, 2021 Bertha Jimenez saw the amount of food waste produced as troubling. She founded Rise in an effort to divert scraps from the landfill. In 2017, the Ecuadorian immigrant collected spent grain Keg & Lantern Brewing Company in Brooklyn, NY to create flour from what otherwise would be considered waste. Since then, she has grown the business, working directly with bakeries and restaurants.
