Bertha Jimenez saw the amount of food waste produced as troubling. She founded Rise in an effort to divert scraps from the landfill.
In 2017, the Ecuadorian immigrant collected spent grain Keg & Lantern Brewing Company in Brooklyn, NY to create flour from what otherwise would be considered waste. Since then, she has grown the business, working directly with bakeries and restaurants.
With upcycling gaining traction, the Upcycled Food Association is releasing a new label on Earth Day to showcase products such as those from Rise.
