The menu is packed with healthy poke bowls, ramen, pasta and salads so I press him further on his favourite foods. âI am quite an adventurous eater. Thereâs few things that I say no to. And the Asian food here is fabulous.â He takes another shot at the myth of the starving artist.

âI love a good carb, like anybody,â he says. âSo fries. I love a good pub meal. We donât have pub culture in America so I love sitting down with a good beer, even a Carlton or something simple. Iâm not fussy about craft beer. And I like a good parma or burger, [although thatâs] not very healthy.â Hallberg grew up in Phoenix, Arizona, where giant portions, Coca-Cola and McDonaldâs rule. âBut Iâm a 6 foot 2 guy so when I allow myself, I can really go for it.â
