Winn talked about his apprenticeship as a restaurateur. “I worked for Paul Hennessey as an assistant manager for about seven or eight years in the Gaslamp Quarter,” he said. “When I found out he was looking to sell this PB location, I called Paul and asked to sit down and talk with him about buying.
