We share a lot of things, pete. Including this cold that we both have. And a special affinity for our guest joey bananas is here. How are you . Good. Thanks for coming in and bringing delightful bananas. Thats right. Last week sometimes, but i do remember my childhood. Especially in my dreams and i remember when i do a segment on the show. When i was little, right after world war ii my father went into the banana business. We would go down to the docks. I think we have a picture up here. We would go to the docks. This is how bananas used to come. They come on a stalk. These guys could carry them out of the belly of the ship on their backs, stalks of bananas. Wed buy stalks, bring them to our little home in new jersey. We hang the bananas up in the basement. Swear to to god. Hed let them ripen down there. Joey will explain about ripening rooms in a minute. Thats what we would do. In those days what he would do, we were never allowed in the basement. The reason being because when the bananas were put in the belly of a ship, if they had a then in the heat they would wake up again. My mother would always say youre not allowed in the basement. She wouldnt have to tell me. Thats amazing. But now what they do with bananas is they do it right in the fields. What they do is take the bananas down. Its an herb, actually, the plant. Not a tree. It could be 12, 15 feet high. Wow. Bananas are cut from the stalk, brought down. Then what theyve done is they take the bananas and do it right in the field. They bag them in the field. Really . Yeah. Its interesting. So then the spiders or snakes are in the bag. How do you get them from the green stage . To getting a banana in the store like this you can eat. So joey knows everything about bananas. Im going to ask him about when the bananas come to you, joey is the wholesaler. When they come to you, how do you get them to a point to sell . Its similar to a cellar because they never go below 56 degrees. And a banana cannot go below that. They come in green like a number three color and we put them in the rooms. We gas them. We check humidity. We add humidity. And theyre like children. We wake them up and we put them to sleep. Constantly watching them. How long does it take to go from the green stage to the ripe stage where we pick them up in the Grocery Store . Just depend . We like to ripen on a five to six day cycle. Slow and steady. Its interesting when you see banana room. Its unbelievable. Now, joey, also you were mentioning that now the bananas because of because of different the rooms they put them in, that the bananas seem to last a little longer even though they look ripe on the outside. Youll find if you eat this banana, its a little hard inside. The shelf life is prolonged a lot with these new rooms. Thats what they do to get them. Joey was on, we taught you how to peel a banana . This. Why you peel it from the bottom . Theres less strings. Shoes. I use it for everything. Betty made some banana bread today. And, you know, like i said, bananas are out there and available. When buying them, bridge them home and just like joey said, they dont like the cold. You dont want to put a banana in the refrigerator. You want to make sure the banana is on the counter. And how do you stop the bananas from ripening . Cellophane. Wrap it on top. It will slow it down. Brilliant. Thank you very much. And joey, thank you very much. Pleasure as usual. Always a pleasure. Thank you. All right. And you can send your questions to pete producepete. Com. Good to have you all here this morning. Theres more ahead on today in new york.
