Opening an artisan bakery - have questions

I have found a 900 square feet space in a good location for an Artisan Bakery. It has a 400 square feet store front in addition to the bakery.I bought an Alto Shaam proofing oven and a Rational Combination Oven, along with a lot of other great stuff.
